# §133.109. Brick cheese for manufacturing.


Brick cheese for manufacturing conforms to the definition and standard of identity for brick cheese prescribed by [§ 133.108](/cfr/21/133.108.md), except that the dairy ingredients are not pasteurized and curing is not required.
